Wholesalers of Organic, Vegetarian and Vegan foods, especially SEITAN (a meat substitute). Chefs on the BBC Food programme have started to mention this food, only recently available in Britain. Our particular brand is fresh, hand-made SEITAN – a totally organic, GM free, vegetarian meat substitute derived from the protein portion of wheat flour (also available in spelt) and suitable also for vegans. It is totally different from other meat substitutes currently on the market, having a much ‘meatier’ texture. It stands in for meat in many recipes and is exceptionally versatile. Apparently, Tom Cruise, who is a vegetarian, is a fan of Seitan, his particular favourite being the ‘roll’ for roasting or boiling. Also it is cholesterol free and for this reason many non-vegetarians eat it to loose weight and get healthy.
According to Barbara and Leonard Jacobs in their excellent book ‘Cooking with Seitan, The Complete Vegetarian 'Wheat-Meat' Cookbook’, 'Seitan has been a staple food among vegetarian monks of China, Russian wheat farmers, peasants of Southeast Asia, and Mormons. People who had traditionally eaten wheat had also discovered a method to extract the gluten and create a Seitan-like product.'
